ingredients

  • 2 pound Chicken Breast
  • 8 ounce finely diced smoked ham
  • 1 ounce chopped red bell pepper
  • 1 ounce chopped yellow bell pepper
  • 8 ounce ground pork
  • 8 ounce ground chicken
  • 2 large eggs
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cumin
  • 1 tsp ground mustard seeds
  • 1 ounce butter
  • 3 rosemary springs

Method

  • Step 1

    Preheat the oven to 325°F.

  • Step 2

    Combine all ingredients except for the chicken breast, butter, rosemary in a large bowl. Set aside.

  • Step 3

    Combine butter and chopped rosemary.

  • Step 4

    Brush the aluminum foil with herbed butter.

  • Step 5

    Lay the chicken breast in in the aluminum foil, skin side down.

  • Step 6

    Spread the chicken-pork mixture on top.

  • Step 7

    Leaving an inch border.

  • Step 8

    Roll the chicken into a long log.

  • Step 9

    Use the aluminum foil to secure the seams.

  • Step 10

    Bake the chicken for 30 minutes.

  • Step 11

    Gently remove the aluminum foil from the chicken galantine.

  • Step 12

    And return the chicken to the oven to roast for another 15 minutes.

  • Step 13

    Serve.
