Stracchino takes its name from the tradition of the northern shepherds, who worked the little milk produced by the "stracche" cows (tired in Lombard dialect) returning from the summer pasture. Still produced according to this tradition, it is a cheese with a unique, natural taste. Sweet creamy flavor with light acidic hues and a soft consistency.
